Ingredients
1 tablespoon olive oil
1 chicken breast, sliced
1 tablespoon soul spice dry rub
1/2 a leek, sliced
a handful of green beans
1/2 a corn on the cob
1 white wrap
cheese (optional)
Method
1) Wash chicken breast with 1 teaspoon of lemon and water. Once washed pat dry with a kitchen towel.
2) Slice chicken breast into a medium sized bowl and add 1 tablespoon of the soul spice dry rub to it. Mix until well combined and leave for about 15 minutes.
3) Rinse leek and green beans. then slice them.
4) Add 1 tablespoon of olive oil to a medium sized frying pan and leave for about a minute. Then add in sliced leek,corn and green beans. Leave until slightly soft but still crunchy. this should take about 8 minutes.
5) Take vegetables out of frying pan and add a little olive oil. Let heat up and then add in chicken slices. Leave for about 5 minutes on each side. Make sure to flip chicken halfway through cooking. It should take about 10 minutes in total. It should be slightly browned when ready.
6) Get wrap of your choice and warm up. Assemble by putting vegetables and chicken unto wrap and roll.
7) The quesadilla is now ready to eat. enjoy
