Ingredients

olive oil

2 unripe plantains

1 1/2 cup chicken broth

2 handfuls chopped pancetta

10 shrimps, sliced 

chicken broth

1/2 onion, chopped

1 tablespoon soul spice dry rub

1 garlic clove

Method

1) Peel plantains and cut into 1 -inch pieces. 

2) Put olive oil in a pan add in plantains and saute. Pour in 1/2 cup chicken broth. Then cover and cook for 10 minutes or until plantains are soft.

4) Chop up garlic,onions and shrimp.Then sautee the onions in garlic. Add pancetta and shrimp and 2 tablespoons of soul spice dry rub and 1 cup of chicken broth.

5) Mash plantains in a bowl and then add the onion pancetta mixture. 

6) The mofongo is now ready to eat. Enjoy
